Yummy Gluten Free Pancakes

I don't crave pancakes very often, but when I want them, I want them!!!!!  

Since going Gluten Free, sometimes it's a pain to bake or make anything with flour. Luckily they have really good pre made mixes if you don't want to bother with making your own.  And you can get some of them at Costco of all places!  Seriously, Costco has really stepped up their game trying to provide Gluten Free and Organic products, it's really nice.


Usually I make my pancakes topped with a yogurt sauce, but you guys do what you like :)

Gluten Free Pancakes

1 cup Gluten Free all purpose baking mix*
2-3 Tbs sugar or sweetener of choice*
1/2 tsp baking powder
1/4 tsp baking soda
1 dash of salt
1 tsp cinnamon, or to taste
2 tsp vanilla
1 2/3 cup milk or milk substitute
1 large egg


Mix first 6 ingredients together in a large bowl. In a medium bowl whisk together the vanilla, milk, and egg.  Mix wet ingredients with the dry, and whisk until mixed and slightly lumpy. If too thin, add in about 2 Tbs more of all purpose flour until batter is thick, but will still run off spoon.

Heat griddle or frying pan on medium heat, and melt a spoonful of coconut oil. Drop 1/4 cup of batter into oil, and cook until edges are set and middle is bubbling. Flip and continue cooking other side until edges are crisp. Set off to side on plate with a paper towel to absorb excess oil.  You may also cook without oil if you wish, just make sure to use a non-stick pan to cook them in.


Yoghurt Sauce

1/4 to 1/3 cup of Greek yoghurt (I personally like Fage`)
Honey to taste (I use organic, fair trade honey. The taste is incredible)

Simply combine both ingredients and top pancakes. Add fresh fruit if desired.



*Notes*** 
For Gluten Free Flour, I used Premium Gold brand, found at Costco.
Sweetner was organic Florida Crystals sugarcane

If you haven't fried pancakes in oil before, I highly recommend coconut oil. It is very light, doesn't make the pancakes heavy and leaves a nice taste.  If all you have available is vegetable oil, use sparingly and definitely blot with a paper towel to get rid of the heaviness.
